La Trobe Street I?m studying commercial cookery and an advanced diploma in hospitality management. I?m in second year. My favourite subject is patisserie. It?s chocolate, bread, sweets. I love my teacher (laughs). But really it?s because patisserie is a challenge. I?d say that I?ve got good time management in the kitchen but with patisserie if you?ve mucked it up, you?ve mucked it up. If it sinks, you fail. If you?re in a kitchen catering for 40 people, you can fix your mistakes in a certain amount of time. But in there ... well, I guess we are training. My best thing would be decorating. I love small decorating and intricate things. I like using marzipan.
